▪️Introducing 11 Breweries:
Shimeharitsuru
Brewery: Miyao Shuzo Co., Ltd.
Miyao Shuzo was founded in 1819 (Bunsei 2). Murakami, where the brewery is located, is a castle town rich in nature, surrounded by sea, mountains, and rivers, with a deep history and traditional culture. Murakami is known as a rice-producing region that yields high-quality sake rice such as Gohyakumangoku, which we use as raw material for our sake brewing. The water, said to influence the taste of sake, is pristine well water from the brewery's grounds, used for brewing and washing. This groundwater is the undercurrent of the Miomote River, known for its salmon runs, and is soft water with a delicate sweetness. What has been passed down through generations at our brewery is a sincere attitude toward sake brewing. We strive to produce sake that brings joy to everyone, using high-quality rice and pristine water as raw materials, aiming for the best possible quality.
