Miyao Shuzo was founded in 1819 (Bunsei 2). Murakami, where the brewery is located, is a castle town rich in nature, surrounded by sea, mountains, and rivers, and boasts a long history and strong traditional culture. Murakami is known as a rice-producing region that yields high-quality sake rice such as Gohyakumangoku, which our brewery uses as an ingredient in our sake brewing. In addition, the water, which is said to affect the taste of sake, comes from clear well water on the premises, used for brewing and washing. This groundwater is the underflow water of the Miomote River, known for its salmon runs, and is soft water with a delicate sweetness. What has been continuously passed down at our brewery is a sincere attitude towards sake brewing. Using high-quality rice and clear water as raw materials, we strive to brew sake with a quality that will please everyone even more.
