Shimeharitsuru
Sake Brewery: Miyao Shuzo Co., Ltd.
Miyao Shuzo was founded in 1819 (Bunsei 2). Murakami, where the brewery is located, is a castle town rich in nature, surrounded by the sea, mountains, and rivers, and boasts a long history and strong traditional culture. Murakami is known as a rice-producing region, producing high-quality sake rice such as Gohyakumangoku, which we use as raw material for our sake brewing. For the water, which is said to affect the taste of sake, we use pure well water from our premises for brewing and washing. This groundwater is subsurface water from the Miomote River, known for its salmon runs, and is soft water with a delicate sweetness. What has been continuously passed down at our brewery is a sincere approach to sake brewing. Using high-quality rice and pure water as raw materials, we strive to brew sake that will be even more appreciated by everyone.
